pancakes in my tummy

Health kick! Okay, maybe some sort of balance, because let’s face it, I like food. I’ve found pancakes are cheap and amazingly easy to make. My post workout meal this morning was savoury pancakes (avo, feta, cherry tomato).
 

Recipe: 1 cup self raising flour; 1 cup milk (I used rice milk); 1 egg... and Bob’s your uncle. For sweet pancakes, I love adding bananas or blueberries, a sprinkle of cinnamon and maybe a little sugar to the recipe. Serve with fruit and honey or maple syrup drizzled on top. Delish!

It’s been precisely one year since I last posted? Guess that thing called life got in the way. Prepare yourself for either an onslaught of posts or one very long post to follow. Here’s a pic in the meantime. Yup, I live there now.
